We actually get this question pretty often, and the problem is this: We barely recruit people as it is.. even very well-geared Alliance with complimentary skills (engineering/herbalism maxed out and whatnot), who have been on Alliance and level 60 for quite some time.
Another problem comes from what class you want to play, and our availability for that class once you have hit 60 and levelled up. We're really not short on anything at the moment, and given our status, whenever we are in need of a specific class it is relatively easy to fill the spot with the best players available.
That said, if you were to roll Alliance on SC, gear up (AQ 20-man bringing epics to the masses), impress some of our members, and apply when we had need of your specific class (also considering your playtime availability) then yes, you could get in. But those are a lot of conditions and there are a lot of 'if's.
My advice to you would simply be to continue playing your Horde characters. There are a number of good Horde guilds here that I'm sure would like to have another old-school playing in their ranks who knows his stuff.
I love Immortality of course, but I don't feel it is worth someone levelling up an Alliance character just for the chance of getting in when we have room.
